  • 1 watermelon (6 to 7 lb.)

  • Half cup lime juice (from 4 limes)

Recipe

  1. Remove the seeds and skin from your watermelon, and cut the fruit into 2-inch pieces
  2. Prepare a simple syrup by combining 2 tablespoons of granulated sugar, ¼ teaspoon salt and ¼ cup water in a saucepan. Once boiled, let it simmer for about 2 to 3 minutes
  3. Add all your ingredients except the melon into the syrup and let it cool
  4. Strain this mixture into a cup or bowl
  5. Work the simple syrup mixture in a blender in two batches
  6. Now also work the watermelon in the blender in two batches
  7. Strain them into a square pan, cover and freeze for at least 8 hours
  8. To serve, use a fork to scrape the ice into large flakes
  9. Transfer these into a glass and add to soda water

  • Star Anise (1)
  • Caster sugar (1/2 cup)
  • Water (1/3 cup)
  • Pineapple juice (2 cups)
  • Chilled sparkling mineral water (1 cup)

  • Blueberries (120 grams)
  • Halved seedless green grapes (100 grams)
  • Halved seedless red grapes (100 grams)
  • Peeled and sliced mango (1)

  • Coffee (1 tablespoon)
  • Milk (4 cups or 1 liter)
  • Drinking chocolate powder (1/3 cup or 80 grams)
  • Chocolate flakes or chocolate curls (for serving) 

Recipe

  1. Use a heatproof jug to add in your coffee and 160 ml (2/3 cup0 hot water
  2. Stir until the coffee completely dissolves
  3. Then, pour in 125 ml (1/2 cup) cold water
  4. Pour the coffee mixture into an ice-cube tray (it should fill up a 12-hole tray)
  5. Place it in the freezer for up to 6 hours 
  6. Add the milk to a small saucepan over low heat
  7. Stir the milk until warm (40 degrees Centigrade)
  8. Add in the chocolate powder
  9. Remove it from heat and stir to dissolve the chocolate powder
  10. For serving, add ice cubes to a glass
  11. Pour the milk and chocolate powder mixture over the ice
  12. Sprinkle your iced coffee mocha with chocolate flakes or chocolate curls
